Chickpea Nation

It is lunchtime again and I just had to gab about my latest find.  Hummus.  I know....WHAT IS THAT!!  Hummus is a blend of chickpeas and other flavorful ingredients that has been pureed to form a spread.  I usually spread a few tablespoons on a flour tortia with sliced cherry tomatoes, cheese (any variety), lettuce, and roll it together like a burritto.  For all those who are squeemish out there...you really only taste the tomatoes unless you try the hummus with dill, then that gives the sandwich a yummy jumpstart.  Hummus can be made at home with a few simple ingredients...check out www.foodtv.com for some ideas.  I have yet to make my own..as with anything else...when I have time.   In this age of healthfood junkies (which I am not), diets galore, and vegatarians,  I can say that this is a winner on my lunchtime menu.  When you too get tired of the slimy lunchmeat selections look to the unlikely little chickpea for a filling alternative.  Hummus anyone?

Oh my husband's great aunts would love you!! They are Lebanese, and hummus is a staple of everything they do!! I've acquired a taste for it (first I was just being polite but now I like it) but mostly we put it on pitas.  Al can't even stand the sight (or smell) of it!  Try Baba Ganoush, you'll like that too!
